1 duck breast, skin-on
2 pieces foie gras (60-80g each)
1 tsp salt
½ tsp black pepper
½ tsp garlic powder
½ tsp thyme or rosemary
½ tbsp butter
For the Blueberry Mustard Sauce:
3 tbsp Mostaza Lab Blueberry Mustard
½ cup fresh or frozen blueberries
2 tbsp balsamic vinegar
1 tbsp honey or maple syrup
¼ cup red wine or port wine
1 clove garlic, minced
1 tbsp butter
For Garnish:
Microgreens or fresh thyme

Instructions
Step 1: Prepare the Duck Breast
1️⃣ Score the skin of the duck breast in a crisscross pattern, being careful not to cut into the meat.
2️⃣ Season with salt, black pepper, garlic powder, and thyme.
3️⃣ Place the duck skin-side down in a cold pan (no oil needed). Slowly increase to medium-low heat, allowing the fat to render for 6-8 minutes, until the skin is crispy and golden.
4️⃣ Flip the duck breast and cook for 3-4 minutes for a medium-rare result. Let it rest for 5 minutes before slicing.
Step 2: Make the Blueberry Mustard Sauce
