Ingredients:


200g Spanish chorizo (semi-cured or fully cured, sliced into thick rounds)

2 tbsp Rioja & Mustard Infusión (your red wine mustard)

1 tbsp honey (extra for a glaze-like finish)

2 tbsp Spanish red wine (Tempranillo, Garnacha, or Rioja)

1 tbsp olive oil

1 clove garlic, minced

½ tsp smoked paprika (pimentón dulce)

½ tsp fresh thyme leaves (optional, for garnish)


Rioja Mustard & Honey Glazed Chorizo Bites

Instructions:

  1. Heat the pan: In a medium pan, heat olive oil over medium heat.

  2. Sauté the garlic: Add the minced garlic and cook for about 30 seconds until fragrant.

  3. Cook the chorizo: Add the chorizo slices and fry for 2-3 minutes on each side until slightly crispy.

  4. Glaze it: Reduce the heat to low and stir in the Rioja & Mustard Infusión, honey, red wine, and smoked paprika. Let it simmer for 2 minutes, coating the chorizo in the glaze.

  5. Finish & serve: Once the sauce thickens slightly, remove from heat and transfer to a serving plate. Sprinkle with fresh thyme (if using).
